| | Sensory evaluation
Sensory evaluation is a method that evokes, measures, and interprets human responses to food and non-food products using the senses of sight, smell, taste, touch, and hearing in order to characterize the appearance, aroma, flavour, texture, and after-sensations of products in ways that cannot be accomplished or predicted by chemical or instrumental laboratory measurements. The Food Processing Development Centre’s sensory evaluation program offers both consumer testing and trained laboratory panels.
Sensory testing can be used for:
- Ingredient/processing/packaging evaluations
- Shelf life testing
- Competitive comparisons
- Research applications
Consumer Testing provides an indicator of the acceptability of a product. Our Consumer Product Testing Centre is located in downtown Edmonton. An expanding database of consumers allows us to obtain a target group of panellists that meet your demographic requirements. This facility is equipped to handle consumer evaluations of any type of food product. In addition to our central test location, we can provide home placement tests. Trained Panel evaluations are used to detect and describe the qualitative and quantitative parameters of food and non-food products. These types of panels are used for both product development and research. Our Leduc facility houses an atmospherically controlled sensory panel room and an extensive range of pilot plant, laboratory, and food service equipment, allowing for preparation, serving, and testing of most food products.
Our sensory scientists consult with you to determine project objectives and to design a test specific to your requirements. We run all sensory tests using controlled procedures, and we can provide statistical analysis of your data and a report with the test procedures and results.
